I have been on winter break for about 3 weeks and I have not eaten breakfast once during break. I guess I only eat breakfast when I have to be up for class before 8am.
And that is just not the case on break!
I start my day off with the good stuff, don’t worry I don’t eat this as soon as I wake up. Maybe an hour or so later because it is usually lunch time.
My favorite summer winter pasta with basil leaves, purple onions, red and green peppers and some white vinegar.
Pasta of your choice
Feta ( of course)
ANY veggies on hand ( I added peas, corn and olives)
Seasoning ( Salt, pepper, garlic, chili power)
I had my pasta salad with a side of baked tandoori chicken
A few bites into the pasta salad I knew something was missing…

I had some company with my meal….
Confession #3: I am scared of dogs. But this one I liked through the window he/she was definitely asking to come in.

Post-lunch I taught a baller ab-crunch class, no pics. I think strangers would be weirded out if I started snapping their picture mid workout.
The best part of my day?
Shopping at Trader Joe’s!
I got some new sauces to try out, I am thinking either tofu or chicken. Lunch tomorrow will be fun!
For dinner I wanted something quick and easy
If garlic bread is wrong, I don’t want to be right.
I microwaved a potato for 5 mins
I went a little wild with some cheese, sour cream and hot sauce. It’s wayy better then Taco Bell’s Cheesy Fiesta Potatoes!
