A snowy filled evening is the perfect time to make your first stir-fry, right?
Meet dinner!
The star of our show? Spaghetti Squash for $5.49. I thought it was a tad bit large and expensive. I was not sure what to do with something the size of a newborn. Do I burp it?
To cook the squash- I poked a million holes in it, said a quick prayer and set it in the microwave for 15 minutes. Note: I would have cooked it longer, it tasted a bit uncooked.
Oh, and it was HOT. Almost burned my fingers!
To eat you literally scoop out the entire middle and start scraping away at the sides.
I got to work on the stir fry. I was not really sure how to get things started so I asked my mom and she told me to fry some onions.
After that I rushed with chopping and adding things in. I should have chopped everything first, but you live and learnn!
- Asparagus
- Baby corn
- Green Pepper
- Snow peas
- 1 teaspoon of minced garlic
- A pinch of chili powder
- 3/4 of the bottle of Thai Yellow Curry Sauce
- Salt to taste
I added the sauce after all the veggies has simmered for a while and were tender.
After adding the sauce I covered the pan and let every thing bubble up!
In between chopping and stirring my stir fry I made a bit of a mess! It was hectic!
I served the stir fry over a bed of spaghetti squash
I think for my first attempt at cooking a stir fry this was really good! The chickpeas went really well with the curry sauce!
Nothing burned. Nobody got sick. I would have to consider this attempt of me cooking a great success!!

You forgot to mention how you were afraid that you would blow your house up with a squash for 20 minutes.

I looooove spaghetti squash, but you’re right- those things are expensive! I need to try that sauce from TJ’s- looks so good!
It always seems to surprise me when chickpeas mix so well with things- maybe because they’re still semi-new to my diet?
5.4 is pretty fast. I tried it a few times and couldn’t get better than 9.5.
I’m a huge fan of stirfry. My mix usually involves, bell peppers, broccoli, waterchesnuts, snap peas, red or green onions, and maybe some chicken or shrimp. The baby corn and chickpeas sounds excellent!
Stir fry looks delicious! Sounds like a great mix of veggies topped with that delicious curry sauce. Yum.
