I guess I was still in a long weekend mode when I showed up to work today because I did not bring any snacks with me.
For breakfast I had a larabar that I brought from home and bought some coffee and hash browns.
I was prepared in the clothing department! Go me, a non yoga pants inspired outfit!
For lunch, I had some frozen Yakisoba Japanese noodles (from Costco).
We have some sneaky co-workers.

Yeah, I clearly had no idea this was going on.
By the time it was, 5pm and my stomach was eating it’s self. I guess I did not eat enough?
An hour and a half later after driving, it was finally time for dinner and I was not feeling well at all. I was experiencing heart burn and my stomach was cramping and burning. Really, it was awesome.
I could not even finish the veggie soft tacos I got from Qdoba. After holding my stomach from the pain and a trip to the bathroom I felt better.
I had grand plans to go to the gym with my mom and sister in the evening. But I stayed home and ate a frozen cupcake and drank some green tea.
I think my stomach hurt from a combination of not eating enough during the day and eating too many vegetables in a span of 24 hours.
Yes, I felt better after eating a cupcake.
It was not fun and I will never do that again. ![]()
I don’t talk about it a lot on the blog but eating any sort of vegetables for more than one serving/ lentils of any sort totally destroys my stomach.
It’s not even a type of pain that I can deal with, it feels like my stomach wants to rip it’s self out of my body. Let’s not even get to the bathroom issues.
I wish I was being dramatic. But that is why I tend to eat a lot more carbs, they make me happy even if my clothes don’t fit.

Having those symptoms is pretty common for distressed bowels. So, start slow. You should try small amounts of slow cooked veggies. Don’t roast or stir fry. You can use a slow cooker or even slow roast (2 hrs at 200) or slow boil (bring to a simmer, lower the heat and let it cook for 1.5- 2 hrs). Slow cooking retains more nutrients and also helps with digestion. Once you become comfortable with this, you can move over to raw veggies.
Try it out! Veggies are important. No way you can avoid it forever, right? And let me know if you want some recipes or something.

I only have a problem if I consume vegetables more than once or twice a week and I have been eating them my entire life, I just noticed this issue in the past year or so? I have never had slow cooked veggies so I will def try those, I always have trouble with stir fry/raw. Thanks for the helpful advice :)
Sounds like the IBS I have. Started about a year ago- after my gallbladder was removed :/
