Last week, I was sitting at work talking to my co-worker about random things, when I suddenly got the idea to make pancake cupcakes.
I love pancakes and I love cupcakes, why not put them together?
They looked and tasted more like muffins…. but I am still going to call them cupcakes.
To make my pancake mix I used a buttermilk pancake mix that I got from Giant and followed the recipe.
However I added 1 tbs of baking powder, which was a tad bit too much, so I would suggest maybe 1/2 a tbs?
My co-worker’s suggestion was sugar coated strawberries.
I was not sure what the best placement for the strawberries would be, so I experimented with a few ideas. Bottom, middle and top, were my experiments and top seemed to workout the best.
Oh and I baked them for 20 minutes at 350 degrees Fahrenheit.
Sadly, the pancake
muffins cupcakes stuck to the liner.
But mixed with way too much syrup, they were absolutely delicious.
My next attempt will be with less baking powder and with some chocolate chips!
Strawberry Filled Pancake Cupcakes (One cup of mix makes 10 cupcakes)
- Follow directions for making regular pancake mix
- Add baking powder (1/2 tbs)
- Pour pancake mix into cupcake liner
- Coat strawberries in sugar and place on top of each cupcake
- Bake for 20 minutes at 350 degrees Fahrenheit.
