Best part about spring break? I actually have the time to make something for breakfast.
Filling:
- 2 tsp of cream cheese
- 3 tsp granulated sugar
French Toast:
- 2 eggs
- A splash of almond milk
- Cut 4 pieces of toast in 1/2
- In between two halves add a layer of cream cheese spread
- Sandwich the two layers together
- Dip the sandwiched layers into the egg+almond milk mixture and lightly pan fry.
After breakfast, my sister and I went shopping for mom shoes. My mom is extremely picky when it comes to shoes. She wanted something comfortable, cheap, with a slight heel, nothing flashy or shiny and in either black or brown.
This is what we came up with for under $30 bucks:
My mom is on the fence about them, but I think she likes them. After shopping, my sister and I got pedicures together.
The ladies who were doing our nails were pressed for time, so I did not enjoy the experience as much.
But I got my happy color!
Oh, and I was happy that it was the first day of spring!
Afterwards, I stopped at Noodle’s and Company for lunch/dinner. Since the meal was around 800+ calories I counted it for both.
INDONESIAN PEANUT SAUTÉ ( my favorite!)
Spicy peanut sauce and rice noodle stir-fry, broccoli, carrots, cabbage, Asian sprouts, cilantro, crushed peanuts and lime
Currently, I am reading a Nicholas Sparks book I picked up from the library and eating a granola bar before I go to bed!
