Another avocado recipe!
And I am basically obsessed with chickpeas, so why not combine them?
Now, I have to be honest, I had never heard of watercress before until my mom mentioned this salad the other day. Is it a relative of cilantro?
What you will need:
- Avocado 1 ripe
- Chickpeas 1 can 15.5oz
- Watercress 3/4 of a bunch
- Lemon juice to taste
- Tomato 1 medium
- Chow Mein Noodles small handful
- Salt and Pepper to taste
Either way, I just had this for lunch today, it was delicious and super filling!
Yay for healthy fats!
And a little crunch does not hurt either.
