Cooking For Myself+ Recipe

I love it when I have enough time in the day to cook something for myself. Why don’t I do this more often? Oh, wait because I like to fill my life with a million things to do and scramble to find something to eat when I am suddenly starving.

Another bonus, my parents were overjoyed that I contributed to a delicious dinner last night, clearly in the running for the favorite child over here.

But let’s backtrack to an entire day’s worth of eats. I did not do a cardio workout yesterday since, I had done it the day before.

I want to record this for myself, so that I know the perfect amount of food that I can eat and go to bed feeling satisfied on a non-cardio day.

I am still going strong with starting my day off with warm water+lemon, I was in a rush this particular morning and I had to stop by at Subway for a cup of warm water.

Yes, I did carry 1/2 a lemon with me in my purse.

I don’t know why but the lemon+water combo keeps me full until I am suddenly starving so since I was out grocery shopping early yesterday morning, breakfast ended up being a Luna bar that I had also stashed away in my bag.

For lunch, I made another blended fruit/veggie mixture. Kale, 2 oranges, frozen mango and frozen pineapple. With a side of naan pizza.

For dinner I wanted to make a quinoa dish, so I threw in some ingredients that I already had at home and it tasted amazing!

Greek/Mediterranean Quinoa Salad

1/2 cup of quinoa (cooked)

1 cup of spinach

1/4 cup feta cheese

2 tbs drained sundried tomatoes

1/2 can of Chickpeas

A dressing of your choice. I mixed together 5 tsp white vinegar, 2 tsp olive oil and salt and pepper.

I always have a hard time cooking the quinoa, and it’s usually because I follow the directions on the back of the box. I like it when the quinoa is nice and fluffy so I usually cook 1 cup of quinoa to SIX cups of water.

Once the quinoa has cooled, add in all of the toppings, chickpeas, feta cheese, chopped spinach, sundried tomatoes and dressing.

Mix and serve!

I was blown away as to how good dinner tasted! I paired it with some steamed brussel sprouts and some baked salmon.

And for a before bedtime snack, I had some Strawberry Yogurt O’s from Trader Joe’s!

Oh and lots of water! I definitely went to bed feeling happy and satisfied! I am so glad that my first day of watching what I ate/weight loss was successful!
