Oat and Banana Pancakes

An alternative title for this post should be, “Are Those Real Pancakes?”

So, this past Sunday morning afternoon I woke up feeling more refreshed and energized than I’ve felt in a while. I was laying in my bed processing the fact that it was 12pm and I’d missed my entire morning, when I decided to kick my day of with a healthy start.

While still in bed I googled “oatmeal+banana pancakes.” Somewhere on the internet I had heard of this healthier alternative to traditional pancakes and I wanted to give it a try. At my house all diets go out the window when it comes to the weekend and we bring it down with some chocolate chip pancakes.

However, I was feeling adventurous.

I challenge myself to finish making the meal before my battery dies. As you can tell from the picture below, I made it.

As soon as my mom saw my pancakes she asked me if they were real pancakes. Silly Mama. I gave her two to try and she loved them! I am always skeptical of recipes that are a “healthy” version of an already delicious food item.

I had grand plans to make a huge batch of these pancakes for a healthy breakfast for the work week. However, these pancakes did not even last 5 minutes. And I was too stuffedfullandhappy to make some more. Next week.

And just to make these pancakes EXTRA healthy, I threw in some chia seeds.


Also, half way through cooking these pancakes my dad took over the pancake making operation because I was “burning the pancakes”. Well Dad, I am posting my burnt pancakes on the internet because they tasted awesome. I mean anything with a touch of maple syrup tastes awesome, right?

  3. I have tried the even more basic egg + banana version of this and it was not my cup of tea. I would be interested to see if the oatmeal turns out better. The ones I had just tasted like banana flavored eggs, which wasn’t really what I was going for! :)

      The oats make a HUGE difference! I would just eat the banana and the eggs alone if they recipe called for them to be mixed together.

      I think the oats are key otherwise you end up with banana flavored eggs like someone experienced above. And that sounds awful!

    Those pancakes look awesome! :D I’ve made pancakes before with just banana, eggs, and oats, but I feel like adding that baking powder would help to fluff it up a bit!
